GUEST POST: Byron’s Cashew Cheese Recipe

In the lead up to our Handcrafted Burger Challenge on Friday night at the Waiting Room, I wanted to share a recipe for my Cashew Cheese to get you in the mood. We’ll be using this in our Philli Cheese Burger on the night. Click the banner below for full event information and details on how to book in advance.

Our aim is to distinguish ourselves by making as much as possible from scratch. In this case our patties, relishes and ‘cheese’!

A bit of background to this recipe…
Before our lifestyle switch to veganism myself and Ruth (photo below) thought we might miss dairy cheese.

I was still working in kitchens that handled dairy products and this made me determined to come up with cheeses that I could make for others and my family.

I thought it would be a good idea to replicate the melty cheese that was cooked in burgers that I had over in the States. The Philli Cheese Burger, a hot, melt-in-the-mouth cheese oozing with flavour, texture and taste.

Our melty cashew cheese is reminiscent of this. It has a thick and creamy texture with white miso giving it that cheesey salty taste. It is as moorish as cheese can get.

We find ourselves using it in toasted sandwiches, on pizza and lasagna.

It’s quick and easy, and can be stored in the fridge to be heated on demand and then put into your burger or put on top of a pizza. The kids love it. We find them using their little fingers to grasp every last bit of it from the bowl. This is a cheese not to be missed in your burger for sure.

V Catering Melty Cashew Cheese Ingredients list:

• 1/4 Cup soaked cashew
• 1 Cup boiling water
• 1tbsp White miso
• 1tbsp Nutritional yeast
• 2tsp lemon juice
• 1tsp garlic
• Pinch pink Himalayan salt
• 2tbsp Tapioca flour

Method:
Put all Ingredients in a blender and blend for about 2 minutes then pour in a saucepan and heat, stir constantly until you get a melty cheese look.
