Next week’s Maker Wednesday on the 1st October is all about baking with Emma Chesters from the Good Souls Bakery. A local bakery creating globally inspired, locally sourced cakes, tray bakes, breads, meringues and sweets. Emma is taking over the session to cook with Alex and you are all invited to join us to hear more from the baker and to try freshly baked treats. Read more and RSVP.

To get your mouth watering we wanted to share her Nice and Easy Coconut Macaroon recipe she’ll be making on the night:

NICE AND EASY COCONUT MACAROON RECIPE
“After posting a picture of coconut macaroons I discovered they are pretty popular and it’s widely believed that they are tricky to tackle. They really aren’t, I promise, especially with this recipe from the Leon Baking and Pudding book. The traditional way involves whisking egg whites and gradually adding sugar, as you do when you make meringue. The Leon approach is far more straightforward and I really can’t say the taste suffers from taking an easier route. I add a teaspoon of Malibu, because I usually have a bottle in the house and it makes a very good coconut extract substitute.”

So what you need to make 12 coconut macaroons:

3 large egg whites
150g caster sugar
2 teaspoons of honey
150g desiccated coconut (if you can get shredded even better but hard to find)
pinch of salt
1 teaspoon of Malibu or ½ teaspoon of coconut or vanilla extract.

  • Heat the oven to 150˚C/130˚C fan/300F/gas mark 2. Place baking paper on a baking sheet.
  • Put the egg whites, sugar, coconut, honey and salt in a large saucepan and turn the hob to medium.
  • Stir, stir and keep on stirring until all has dissolved. Really, don’t stop stirring until the mixture is just beginning to brown. Then take the pan off the heat and stir in the vanilla/coconut extract or Malibu.
  • Let the macaroon mixture get completely cold, then use an ice-cream scoop or your hands to make 12 even sized balls and place on baking sheet.
  • Bake for about 10-15 minutes, or until gorgeously golden and set.
  • Enjoy.

They are open to everyone of all ages, backgrounds and skills.

Maker Wednesdays provide a flavour of what’s on offer at our Hack/Maker/Library/Space.
A shared workshop environment, accessed via a pay what you can membership scheme. Free if pre-booked, otherwise £5 on the day.
